From what I can tell, when you start a new game with Disc 1 of Subsistence, you must choose, "I like MGS3!" in order to unlock Disc 2's additional content. I tested it out, and it worked like a charm. Good luck! That must be the problem. I guess I should have made it clear that I had made...

and yes I've started up and saved a new game in Snake Eater and I'm still not presented with a demo or secret theater option at the main menu of the subsistence and persistence discs.
